Vinification: A selective harvest of the best clusters of Xarel·lo. The clusters are manually transported to an ancient hay barn, where they are hung for a period of 120 days, until they turn into raisins by natural dehydration and ventilation, reaching the desired level of concentration. Subsequent 9 month ageing in new French oak barrels.

Tasting and pairing: It has a powerful bouquet of white flowers such as jasmine, also apricot quince, bitter almonds and nuts. Elegant to the mouth and with great finesse. It is exceptionally rich with its complex flavours persisting and an alluring development of over-matureness, fresh fruity and a soft cream touch, which propel a rare yet not cloying final persistence. Pairs magically well with foie gras and créme brûlée.
