Vinification

Maceration and fermentation in open oak barrels for 2 weeks at 25° C. Ageing in oak barrels for 12 months.

Tasting and pairing

Scarlet red in colour. Plum aromas and some spicy notes, reminiscent of cobbled, dusty streets. On the palate it is structured, soft, rounded, full bodied and has a persistent finish. Works with most dishes - marinated fish, white meats, game, pork, lamb shank, mature cheese.
